Pomodoro – The Italian Base Sauce

Simplicity is endemic to all Italian dishes – they don`t like doing multiple flavours in any one dish. I like how versatile their base ingredients are. Mitch makes an easy Pomodoro on the gas cooker that is full of flavour and can be added to a pasta or on a pizza base.



1 large onion, 2 cloves of garlic, 1 tsp of oregano, butter, 1 can of chopped tomatoes, Parmesan cheese, basil.


  1. Halve the onions, removing the germ (the bitter part), then finely dice. Similarly remove the germ from the halved garlic, very finely dice and then mash against the flat of the blade to make a paste.
  2. Add butter to the pan on medium heat, then add the onion nad garlic with the garlic.
  3. Once the onion becomes translucent, add the can of chopped tomatoes, stir and cover, stirring regularly over the next 15minutes. Add a dash of red wine vinegar or red wine (optional).
  4. Add Parmesan cheese to the sauce (saving half). The sauce can be added to pasta, gnocchi, vegetables, nearly anything. Above we went with cooked courgettes, peppers and aubergine. Garnish with basil and the remaining Parmesan
